- Chicken (poularde) - 500 grams
- Dried morel mushrooms - 30 grams
- Heavy cream - 200 ml
- Chicken stock - 150 ml
- Shallots - 2, finely chopped
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Soak the dried morel mushrooms in warm water for about 20 minutes, then drain and pat dry.
- In a large skillet, heat the olive oil and butter over medium heat. Add the chopped shallots and cook until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute, being careful not to burn it.
- Add the chicken pieces to the skillet, season with salt and pepper, and brown on all sides, about 8-10 minutes.
- Stir in the soaked morel mushrooms and fresh thyme, cooking for another 2 minutes.
- Pour in the chicken stock and bring to a simmer. Cover and cook for 15 minutes, or until the chicken is cooked through.
- Remove the chicken from the skillet and keep warm. Stir in the heavy cream and let it simmer for 5 minutes, until the sauce thickens slightly.
- Return the chicken to the skillet, coating it in the creamy sauce, and cook for an additional 2-3 minutes.
- Serve hot, garnished with fresh parsley.
