  • Almond flour - 100g
  • Coconut sugar - 50g
  • Baking powder - 1 tsp
  • Coconut milk - 120ml
  • Egg - 1 large
  • Vanilla extract - 1 tsp
  • Salt - a pinch
  • Maple syrup - 60ml
  • Coconut oil - 30g (melted)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish.
  2. In a mixing bowl, combine almond flour, coconut sugar, baking powder, and salt.
  3. In another bowl, whisk together the coconut milk, egg, vanilla extract, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the greased baking dish and spread it evenly.
  6. In a small saucepan, combine maple syrup and 120ml of water, bringing it to a simmer to create a syrup.
  7. Pour the syrup gently over the batter in the baking dish.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden and a toothpick comes out clean.
  9. Allow to cool slightly before serving warm.
