Ingredients

  • Leeks - 150 grams, chopped
  • Potatoes - 200 grams, peeled and diced
  • Chicken breast - 100 grams, cooked and shredded
  • Vegetable broth - 500 ml
  • Greek yogurt - 100 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chives - for garnish

Steps

  1. In a pot, heat the olive oil over medium heat. Add the chopped leeks and sauté for about 5 minutes until they are soft and translucent.
  2. Add the diced potatoes to the pot and stir for another 2 minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 15 minutes or until the potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and puree until smooth before returning it to the pot.
  5. Stir in the shredded chicken and Greek yogurt, mixing well until heated through. Season with salt and black pepper to taste.
  6. Serve hot, garnished with chopped chives.
