Ingredients
- Leeks - 150 grams, chopped
- Potatoes - 200 grams, peeled and diced
- Chicken breast - 100 grams, cooked and shredded
- Vegetable broth - 500 ml
- Greek yogurt - 100 grams
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chives - for garnish
Steps
- In a pot, heat the olive oil over medium heat. Add the chopped leeks and sauté for about 5 minutes until they are soft and translucent.
- Add the diced potatoes to the pot and stir for another 2 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 15 minutes or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and puree until smooth before returning it to the pot.
- Stir in the shredded chicken and Greek yogurt, mixing well until heated through. Season with salt and black pepper to taste.
- Serve hot, garnished with chopped chives.
