- Celery - 100 grams, diced
- Garlic - 2 cloves, minced
- Cabbage - 100 grams, chopped
- Green beans - 100 grams, trimmed
- Chickpeas - 150 grams, cooked
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the garlic and leeks, sautéing until they are soft and fragrant, about 3 minutes.
- Stir in the carrots, celery, and potatoes, cooking for another 5 minutes.
- Pour in the vegetable broth and add the bay leaf, thyme, salt, and pepper. Bring to a boil.
- Once boiling, reduce the heat to low and simmer for 15 minutes.
- Add the cabbage and green beans to the pot, and continue to simmer for an additional 10 minutes until all vegetables are tender.
- Stir in the cooked chickpeas and heat through for about 5 minutes.
- Remove the bay leaf, adjust seasoning if necessary, and garnish with fresh parsley before serving.
