  • Leeks - 100 grams, sliced
  • Celery - 100 grams, diced
  • Garlic - 2 cloves, minced
  • Cabbage - 100 grams, chopped
  • Green beans - 100 grams, trimmed
  • Chickpeas - 150 grams, cooked
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the garlic and leeks, sautéing until they are soft and fragrant, about 3 minutes.
  3. Stir in the carrots, celery, and potatoes, cooking for another 5 minutes.
  4. Pour in the vegetable broth and add the bay leaf, thyme, salt, and pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low and simmer for 15 minutes.
  6. Add the cabbage and green beans to the pot, and continue to simmer for an additional 10 minutes until all vegetables are tender.
  7. Stir in the cooked chickpeas and heat through for about 5 minutes.
  8. Remove the bay leaf, adjust seasoning if necessary, and garnish with fresh parsley before serving.
