- Kosher beef brisket - 300 grams
- Kosher smoked sausage - 100 grams
- Carrots - 2 medium, sliced
- Potatoes - 2 medium, cubed
- Leek - 1, sliced
- Celery - 1 stalk, chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 1.5 liters
Steps
- In a large pot, add the kosher beef brisket and cover with 1.5 liters of water. Bring to a boil over medium heat.
- Skim off any foam that rises to the surface, then reduce the heat to low and add the onion, garlic, thyme, bay leaf, salt, and pepper. Cover and simmer for 1 hour.
- After 1 hour, add the sliced carrots, cubed potatoes, sliced leek, and chopped celery to the pot.
- Slice the kosher smoked sausage and add it to the pot. Stir gently to combine all ingredients.
- Cover and continue to simmer for another 30-40 minutes, or until the vegetables are tender and the brisket is cooked through.
- Remove the bay leaf and adjust seasoning to taste before serving.
