Ingredients

  • Pork belly - 500 grams
  • Kosher salt - 15 grams
  • Black pepper - 5 grams
  • Garlic powder - 2 grams
  • Smoked paprika - 3 grams
  • Brown sugar - 10 grams
  • Fresh thyme - 5 grams
  • Olive oil - 15 ml
  • Lemon juice - 10 ml
  • Water - 200 ml

Steps

  1. Preheat your oven to 150°C (300°F).
  2. Cut the pork belly into 4 equal pieces and score the skin with a sharp knife, being careful not to cut into the meat.
  3. In a bowl, mix the kosher salt, black pepper, garlic powder, smoked paprika, brown sugar, and fresh thyme.
  4. Rub the spice mixture all over the pork belly pieces, ensuring they are well coated.
  5. In a large oven-safe pot, heat the olive oil over medium heat. Sear the pork belly pieces skin-side down until the skin is crispy, about 5-7 minutes.
  6. Flip the pork belly pieces and add water and lemon juice to the pot. Cover the pot and place it in the preheated oven.
  7. Cook for 2 hours, checking occasionally to make sure there is enough liquid in the pot, adding more water if needed.
  8. After 2 hours, remove the pot from the oven, let the pork belly cool slightly, then transfer the pieces to a grill.
  9. Grill the pork belly over medium-high heat for about 5-10 minutes, turning occasionally until the skin is crispy and caramelized.
  10. Serve warm, garnished with fresh thyme if desired.
