Ingredients

  • Potatoes (Yukon Gold or similar) - 400 grams
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Peel the potatoes and cut them into 2 cm cubes for even cooking.
  2. Rinse the potato cubes under cold water to remove excess starch, then drain and pat dry with a kitchen towel.
  3. In a large skillet, heat the olive oil and butter over medium heat until hot but not smoking.
  4. Add the potato cubes to the skillet in a single layer and cook without stirring for about 5 minutes until they start to turn golden brown.
  5. Gently stir the potatoes, then add the minced garlic, fresh thyme, salt, and black pepper.
  6. Continue to sauté the potatoes for another 15-20 minutes, stirring occasionally, until they are tender inside and crispy outside.
  7. Once cooked, remove from heat and garnish with freshly chopped parsley before serving.
