Steps
- Peel the potatoes and slice them into 1/4-inch thick rounds.
- Rinse the potato slices under cold water to remove excess starch, then pat them dry with a clean kitchen towel.
- In a large skillet, heat the olive oil over medium heat.
- Add the potato slices to the skillet in a single layer, ensuring they are not overcrowded. Cook for about 10 minutes, without stirring, until the bottoms are golden brown.
- Flip the potatoes and cook for another 10 minutes, stirring occasionally, until they are crispy and tender.
- Add the minced garlic and chopped thyme to the skillet, and season with salt and black pepper. Cook for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant.
- Remove from heat and serve hot, garnished with additional thyme if desired.
