Steps

  1. Peel the potatoes and slice them into 1/4-inch thick rounds.
  2. Rinse the potato slices under cold water to remove excess starch, then pat them dry with a clean kitchen towel.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the potato slices to the skillet in a single layer, ensuring they are not overcrowded. Cook for about 10 minutes, without stirring, until the bottoms are golden brown.
  5. Flip the potatoes and cook for another 10 minutes, stirring occasionally, until they are crispy and tender.
  6. Add the minced garlic and chopped thyme to the skillet, and season with salt and black pepper. Cook for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant.
  7. Remove from heat and serve hot, garnished with additional thyme if desired.
