- Potatoes - 400 grams (about 2 medium-sized)
- Olive oil - 2 tablespoons

- Fresh rosemary - 1 teaspoon, chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 220°C (428°F).
- Wash and peel the potatoes, then cut them into 2.5 cm cubes.
- In a large bowl, combine the cubed potatoes with olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Toss until the potatoes are evenly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 30-35 minutes, or until golden brown and crispy, tossing halfway through for even cooking.
- Remove from the oven and let them cool for a couple of minutes before serving.
