- small new potatoes - 500 grams
- extra virgin olive oil - 2 tablespoons
- garlic - 2 cloves, minced
- fresh rosemary - 1 tablespoon, chopped
- sea salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Wash the small new potatoes thoroughly and pat them dry.
- In a mixing bowl, combine the potatoes, olive oil, minced garlic, chopped rosemary, sea salt, and black pepper. Toss until the potatoes are evenly coated.
- Spread the potatoes out in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and tender when pierced with a fork, tossing them halfway through the cooking time.
- Once done, remove from the oven and let cool slightly. Garnish with chopped parsley before serving.
