  • small new potatoes - 500 grams
  • extra virgin olive oil - 2 tablespoons
  • garlic - 2 cloves, minced
  • fresh rosemary - 1 tablespoon, chopped
  • sea salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the small new potatoes thoroughly and pat them dry.
  3. In a mixing bowl, combine the potatoes, olive oil, minced garlic, chopped rosemary, sea salt, and black pepper. Toss until the potatoes are evenly coated.
  4. Spread the potatoes out in a single layer on a baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and tender when pierced with a fork, tossing them halfway through the cooking time.
  6. Once done, remove from the oven and let cool slightly. Garnish with chopped parsley before serving.
