- Large potatoes - 2
- Ground halal beef - 150 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Cheese (grated, optional) - 50 grams
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and pierce them several times with a fork. Bake in the preheated oven for 45 minutes or until tender.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the ground halal beef to the skillet, stirring in the paprika, salt, and black pepper. Cook until the beef is browned and fully cooked, about 5-7 minutes.
- Stir in the chopped parsley and remove from heat.
- Once the potatoes are cooked, let them cool slightly. Cut each potato in half lengthwise and scoop out a portion of the flesh, leaving a shell.
- Mix the scooped potato flesh with the beef mixture until well combined. If desired, fold in the grated cheese.
- Stuff each potato half with the beef mixture, packing it well.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes until heated through and slightly crispy on top.
