Ingredients

  • Potatoes - 400 grams, peeled and thinly sliced
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the sliced potatoes, onion, garlic, thyme, salt, and pepper.
  3. Drizzle the olive oil over the potato mixture and toss until well coated.
  4. In a baking dish, arrange half of the potato mixture in an even layer. Place the bay leaf on top.
  5. Pour half of the vegetable broth over the potatoes.
  6. Layer the remaining potato mixture on top, and pour the rest of the vegetable broth over it.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and golden on top.
  9. Remove from the oven, discard the bay leaf, and let cool for a few minutes before serving.
