Ingredients
- Potatoes - 400 grams, peeled and thinly sliced
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the sliced potatoes, onion, garlic, thyme, salt, and pepper.
- Drizzle the olive oil over the potato mixture and toss until well coated.
- In a baking dish, arrange half of the potato mixture in an even layer. Place the bay leaf on top.
- Pour half of the vegetable broth over the potatoes.
- Layer the remaining potato mixture on top, and pour the rest of the vegetable broth over it.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and golden on top.
- Remove from the oven, discard the bay leaf, and let cool for a few minutes before serving.
