- Potatoes (Yukon Gold) - 400 grams
- Unsalted butter - 60 grams
- Cooked green lentils - 100 grams
- Fresh thyme - 1 teaspoon, chopped
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parmesan cheese - 30 grams, grated
Steps
- Preheat your oven to 200°C (400°F).
- Peel the potatoes and slice them thinly (about 2-3 mm thick) using a mandoline or a sharp knife.
- In a small saucepan, melt the butter over low heat. Add minced garlic and cook for 1-2 minutes until fragrant, then remove from heat.
- In a large bowl, combine the sliced potatoes, cooked lentils, chopped thyme, salt, and black pepper. Pour half of the melted garlic butter over the mixture and toss to combine.
- Grease a round baking dish with some of the remaining garlic butter. Layer half of the potato-lentil mixture in the dish, pressing down gently.
- Sprinkle half of the grated Parmesan cheese over the first layer. Add the remaining potato-lentil mixture on top, pressing it down firmly again.
- Drizzle the remaining garlic butter over the top layer and sprinkle with the remaining Parmesan cheese.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and crispy.
- Let it cool for a few minutes before slicing into wedges and serving.
