Ingredients

  • Potatoes (Yukon Gold) - 400 grams
  • Unsalted butter - 60 grams
  • Cooked green lentils - 100 grams
  • Fresh thyme - 1 teaspoon, chopped
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel the potatoes and slice them thinly (about 2-3 mm thick) using a mandoline or a sharp knife.
  3. In a small saucepan, melt the butter over low heat. Add minced garlic and cook for 1-2 minutes until fragrant, then remove from heat.
  4. In a large bowl, combine the sliced potatoes, cooked lentils, chopped thyme, salt, and black pepper. Pour half of the melted garlic butter over the mixture and toss to combine.
  5. Grease a round baking dish with some of the remaining garlic butter. Layer half of the potato-lentil mixture in the dish, pressing down gently.
  6. Sprinkle half of the grated Parmesan cheese over the first layer. Add the remaining potato-lentil mixture on top, pressing it down firmly again.
  7. Drizzle the remaining garlic butter over the top layer and sprinkle with the remaining Parmesan cheese.
  8. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and crispy.
  9. Let it cool for a few minutes before slicing into wedges and serving.
