Pommes Dauphine

Ingredients
- Potatoes - 300 grams
- Butter - 50 grams
- Water - 150 milliliters
- All-purpose flour - 75 grams
- Eggs - 2 large
- Salt - 1 teaspoon
- Nutmeg - a pinch
- Vegetable oil - for frying
Steps
- Peel and chop the potatoes into chunks, then boil in salted water until tender, about 15-20 minutes.
- Drain the potatoes and mash them until smooth. Set aside to cool slightly.
- In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
- Once boiling, add the flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
- Remove from heat and let cool for a few minutes. Add the mashed potatoes to the mixture and mix well until combined.
- In a separate bowl, beat the eggs. Gradually add the beaten eggs to the potato-flour mixture, stirring until smooth and glossy.
- Heat vegetable oil in a deep pan or fryer to 180°C (350°F).
- Using two spoons, scoop out small portions of the dough and carefully drop them into the hot oil. Fry in batches until golden brown, about 3-4 minutes each side.
- Remove with a slotted spoon and drain on paper towels. Serve hot.
