Pommes Dauphine

Ingredients

  • Potatoes - 300 grams
  • Butter - 50 grams
  • Water - 150 milliliters
  • All-purpose flour - 75 grams
  • Eggs - 2 large
  • Salt - 1 teaspoon
  • Nutmeg - a pinch
  • Vegetable oil - for frying

Steps

  1. Peel and chop the potatoes into chunks, then boil in salted water until tender, about 15-20 minutes.
  2. Drain the potatoes and mash them until smooth. Set aside to cool slightly.
  3. In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
  4. Once boiling, add the flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  5. Remove from heat and let cool for a few minutes. Add the mashed potatoes to the mixture and mix well until combined.
  6. In a separate bowl, beat the eggs. Gradually add the beaten eggs to the potato-flour mixture, stirring until smooth and glossy.
  7. Heat vegetable oil in a deep pan or fryer to 180°C (350°F).
  8. Using two spoons, scoop out small portions of the dough and carefully drop them into the hot oil. Fry in batches until golden brown, about 3-4 minutes each side.
  9. Remove with a slotted spoon and drain on paper towels. Serve hot.
