Ingredients

  • Yukon Gold potatoes - 400 grams
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 60 ml
  • Vegetable broth - 120 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Peel and cut the Yukon Gold potatoes into even chunks.
  2. In a large pot, add the potato chunks and cover them with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to medium and simmer the potatoes for about 15-20 minutes, or until fork-tender.
  4. While the potatoes are cooking, heat the olive oil in a small saucepan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, being careful not to burn it.
  5. Once the potatoes are cooked, drain them and return them to the pot. Pour in the garlic-infused olive oil and vegetable broth.
  6. Using a potato masher or a ricer, mash the potatoes until smooth and creamy. Adjust the consistency with more vegetable broth if desired.
  7. Season with salt and black pepper to taste. Serve warm as a side dish.
