Ingredients
- Yukon Gold potatoes - 400 grams
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 60 ml
- Vegetable broth - 120 ml
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Peel and cut the Yukon Gold potatoes into even chunks.
- In a large pot, add the potato chunks and cover them with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
- Once boiling, reduce the heat to medium and simmer the potatoes for about 15-20 minutes, or until fork-tender.
- While the potatoes are cooking, heat the olive oil in a small saucepan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, being careful not to burn it.
- Once the potatoes are cooked, drain them and return them to the pot. Pour in the garlic-infused olive oil and vegetable broth.
- Using a potato masher or a ricer, mash the potatoes until smooth and creamy. Adjust the consistency with more vegetable broth if desired.
- Season with salt and black pepper to taste. Serve warm as a side dish.
