Ingredients

  • Polenta - 200 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons (optional)

Steps

  1. In a saucepan, bring the vegetable broth to a boil over medium heat.
  2. Gradually whisk in the polenta, stirring continuously to prevent lumps.
  3. Add the salt, garlic powder, and black pepper, and continue to cook for about 10-15 minutes until the mixture thickens and pulls away from the sides of the pan.
  4. Remove from heat and stir in the chopped thyme and nutritional yeast (if using).
  5. Pour the polenta into a greased rectangular dish and spread it evenly. Allow it to cool and set for at least 30 minutes.
  6. Once set, slice the polenta into rectangular pieces.
  7. Preheat a grill or grill pan over medium-high heat and brush each polenta slice with olive oil.
  8. Grill the polenta slices for about 3-4 minutes on each side until they are crispy and have grill marks.
  9. Serve hot, garnished with additional thyme if desired.
