Ingredients
- Polenta - 200 grams
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutritional yeast - 2 tablespoons (optional)
Steps
- In a saucepan, bring the vegetable broth to a boil over medium heat.
- Gradually whisk in the polenta, stirring continuously to prevent lumps.
- Add the salt, garlic powder, and black pepper, and continue to cook for about 10-15 minutes until the mixture thickens and pulls away from the sides of the pan.
- Remove from heat and stir in the chopped thyme and nutritional yeast (if using).
- Pour the polenta into a greased rectangular dish and spread it evenly. Allow it to cool and set for at least 30 minutes.
- Once set, slice the polenta into rectangular pieces.
- Preheat a grill or grill pan over medium-high heat and brush each polenta slice with olive oil.
- Grill the polenta slices for about 3-4 minutes on each side until they are crispy and have grill marks.
- Serve hot, garnished with additional thyme if desired.
