Ingredients

  • White fish fillets (e.g., sole or cod) - 300 grams
  • Olive oil - 2 tablespoons
  • Butter - 30 grams
  • Capers - 2 tablespoons, rinsed
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Pat the fish fillets dry with paper towels and season both sides with salt and black pepper.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  3. Once the oil is hot, add the fish fillets to the skillet and cook for about 3-4 minutes on each side, or until they are golden brown and cooked through. Remove the fish from the skillet and set aside.
  4. In the same skillet, reduce the heat to medium and add 30 grams of butter. Allow it to melt and foam, then add the rinsed capers and sauté for about 1 minute until fragrant.
  5. Add the lemon juice and chopped parsley to the skillet, stirring to combine and create a sauce.
  6. Return the cooked fish to the skillet, spooning the sauce over the top to coat.
  7. Serve immediately, garnished with additional parsley if desired.
