Ingredients

  • White fish fillets (such as sea bass or dorado) - 300 grams
  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 1 medium, sliced
  • Bell pepper (red or yellow) - 1 medium, sliced

Steps

  1. In a bowl, mix olive oil, lemon juice, minced garlic, thyme, rosemary, sea salt, and black pepper to create a marinade.
  2. Add the fish fillets to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. While the grill is heating, toss the cherry tomatoes, zucchini, and bell pepper in a little olive oil, salt, and pepper.
  5. Place the marinated fish fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.
  6. Grill the vegetables on a separate section of the grill for about 6-8 minutes, turning occasionally, until they are tender and lightly charred.
  7. Serve the grilled fish with the grilled vegetables on the side, drizzled with any remaining marinade.
