- Cherry tomatoes - 150 grams, halved
- Zucchini - 1 medium, sliced
- Lemon wedges - for serving
Steps
- In a bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, chopped thyme, salt, and black pepper to create a marinade.
- Add the fish fillets to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 15 minutes.
- Preheat your grill to medium-high heat.
- While the grill is heating, prepare the vegetables by tossing cherry tomatoes and zucchini slices with a drizzle of olive oil, salt, and pepper.
- Once the grill is hot, place the marinated fish fillets on the grill and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork.
- At the same time, grill the cherry tomatoes and zucchini for about 6-8 minutes until they are tender and have grill marks.
- Remove the fish and vegetables from the grill and let them rest for a couple of minutes.
- Serve the grilled fish with the vegetables on a plate, garnished with lemon wedges.
