Ingredients

  • Fresh white fish fillets (such as cod or sole) - 300 grams
  • Cherry tomatoes - 150 grams
  • Zucchini - 1 medium, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh basil - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon - 1, sliced
  • Salt - ½ teaspoon
  • Black pepper - ½ teaspoon

Steps

  1. Preheat the BBQ grill to medium heat.
  2. Cut two large pieces of parchment paper, about 30x40 cm each.
  3. In a bowl, combine the zucchini, red bell pepper, cherry tomatoes, garlic, parsley, basil, olive oil, salt, and pepper. Mix well.
  4. Place half of the vegetable mixture in the center of each piece of parchment paper.
  5. Lay the fish fillets on top of the vegetables and season with additional salt and pepper. Place lemon slices over the fish.
  6. Fold the parchment paper over the fish and vegetables, creating a sealed packet by folding the edges tightly.
  7. Place the packets on the grill and cook for about 15-20 minutes, until the fish is cooked through and flakes easily with a fork.
  8. Carefully open the packets (watch out for steam) and serve immediately.
