- Fresh white fish fillets (such as cod or sole) - 300 grams
- Cherry tomatoes - 150 grams
- Zucchini - 1 medium, thinly sliced
- Red bell pepper - 1, thinly sliced
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh basil - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon - 1, sliced
- Salt - ½ teaspoon
- Black pepper - ½ teaspoon
Steps
- Preheat the BBQ grill to medium heat.
- Cut two large pieces of parchment paper, about 30x40 cm each.
- In a bowl, combine the zucchini, red bell pepper, cherry tomatoes, garlic, parsley, basil, olive oil, salt, and pepper. Mix well.
- Place half of the vegetable mixture in the center of each piece of parchment paper.
- Lay the fish fillets on top of the vegetables and season with additional salt and pepper. Place lemon slices over the fish.
- Fold the parchment paper over the fish and vegetables, creating a sealed packet by folding the edges tightly.
- Place the packets on the grill and cook for about 15-20 minutes, until the fish is cooked through and flakes easily with a fork.
- Carefully open the packets (watch out for steam) and serve immediately.
