- Fresh thyme - 1 teaspoon, chopped
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 150 grams, halved
- Zucchini - 1 medium, sliced
- Bell pepper (any color) - 1, sliced
Steps
- Preheat the oven to 200°C (390°F).
- In a small bowl, mix together the olive oil, lemon juice, minced garlic, chopped parsley, chopped thyme, sea salt, and black pepper.
- Place the fish fillets in a baking dish and pour the marinade over the top, ensuring they are well coated.
- Add the halved cherry tomatoes, sliced zucchini, and bell pepper around the fish in the baking dish.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve hot, garnished with additional fresh herbs if desired.
