  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 1 medium, sliced
  • Bell pepper (any color) - 1, sliced

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a small bowl, mix together the olive oil, lemon juice, minced garlic, chopped parsley, chopped thyme, sea salt, and black pepper.
  3. Place the fish fillets in a baking dish and pour the marinade over the top, ensuring they are well coated.
  4. Add the halved cherry tomatoes, sliced zucchini, and bell pepper around the fish in the baking dish.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
  6. Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Serve hot, garnished with additional fresh herbs if desired.
