Ingredients

  • White fish fillets (like cod or sole) - 300 grams
  • Butter - 100 grams
  • Shallots - 2, finely chopped
  • Dry white wine - 100 ml
  • Heavy cream - 50 ml
  • Fresh lemon juice - 1 tablespoon
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, melt 30 grams of butter over medium heat. Add the finely chopped shallots and cook until softened, about 3 minutes.
  2. Pour in the dry white wine and simmer until reduced by half, about 5 minutes.
  3. Add the heavy cream and lemon juice to the saucepan, then simmer gently for another 5 minutes, stirring occasionally.
  4. Remove the saucepan from heat and gradually whisk in the remaining 70 grams of cold butter until the sauce is emulsified and smooth. Season with salt and black pepper to taste.
  5. While the sauce is being prepared, season the fish fillets with salt and pepper. Heat a non-stick skillet over medium-high heat with a little butter or oil.
  6. Cook the fish fillets for about 3-4 minutes on each side, or until they are cooked through and flaky.
  7. Plate the fish and generously spoon the beurre blanc sauce over the top. Garnish with chopped fresh parsley and serve immediately.
