- Gluten-free pizza flour - 150g
- Warm water - 120ml
- Active dry yeast - 5g
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Tomato sauce - 100g
- Fresh mozzarella cheese - 100g
- Fresh basil leaves - 10g
- Cherry tomatoes - 100g
- Black olives - 30g
- Balsamic glaze - for drizzling
Steps
- In a small bowl, mix the warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large bowl, combine the gluten-free pizza flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead for about 5 minutes until smooth. If the dough is too sticky, add a little more flour.
- Cover the dough with a clean cloth and let it rise in a warm place for 15-20 minutes.
- Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
- Divide the dough into two equal portions and roll each into a small circle on a floured surface, about 5mm thick.
- Transfer the rolled dough to the prepared baking sheet. Spread a layer of tomato sauce on each base.
- Tear the fresh mozzarella into pieces and distribute evenly over the sauce, followed by halved cherry tomatoes and black olives.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the cheese is bubbly.
- Remove from the oven, garnish with fresh basil leaves, and drizzle with balsamic glaze before serving.
