  • Gluten-free pizza flour - 150g
  • Warm water - 120ml
  • Active dry yeast - 5g
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Tomato sauce - 100g
  • Fresh mozzarella cheese - 100g
  • Fresh basil leaves - 10g
  • Cherry tomatoes - 100g
  • Black olives - 30g
  • Balsamic glaze - for drizzling

Steps

  1. In a small bowl, mix the warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large bowl, combine the gluten-free pizza flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead for about 5 minutes until smooth. If the dough is too sticky, add a little more flour.
  4. Cover the dough with a clean cloth and let it rise in a warm place for 15-20 minutes.
  5. Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
  6. Divide the dough into two equal portions and roll each into a small circle on a floured surface, about 5mm thick.
  7. Transfer the rolled dough to the prepared baking sheet. Spread a layer of tomato sauce on each base.
  8. Tear the fresh mozzarella into pieces and distribute evenly over the sauce, followed by halved cherry tomatoes and black olives.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the cheese is bubbly.
  10. Remove from the oven, garnish with fresh basil leaves, and drizzle with balsamic glaze before serving.
