Ingredients

  • Buckwheat flour - 100 grams
  • Water - 200 milliliters
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Grated cheese (such as Gruyère) - 100 grams
  • Sliced tomatoes - 100 grams
  • Fresh basil - a handful
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine buckwheat flour and salt. Make a well in the center and add the egg and olive oil.
  2. Gradually pour in the water while whisking until you achieve a smooth batter. Let it rest for 10 minutes.
  3. Preheat a non-stick skillet over medium heat and lightly grease with olive oil.
  4. Pour half of the batter into the skillet, spreading it evenly to form a thin pancake. Cook for about 3-4 minutes until the edges lift and the bottom is golden.
  5. Flip the pancake and immediately sprinkle half of the grated cheese on top, followed by half of the sliced tomatoes and a sprinkle of black pepper.
  6. Cover the skillet and cook for another 3-4 minutes until the cheese melts.
  7. Carefully remove from the skillet, garnish with fresh basil, and repeat the process with the remaining batter and toppings for the second pizza.
