- Buckwheat flour - 100 grams
- Water - 200 milliliters
- Egg - 1 large
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Grated cheese (such as Gruyère) - 100 grams
- Sliced tomatoes - 100 grams
- Fresh basil - a handful
- Black pepper - to taste
Steps
- In a mixing bowl, combine buckwheat flour and salt. Make a well in the center and add the egg and olive oil.
- Gradually pour in the water while whisking until you achieve a smooth batter. Let it rest for 10 minutes.
- Preheat a non-stick skillet over medium heat and lightly grease with olive oil.
- Pour half of the batter into the skillet, spreading it evenly to form a thin pancake. Cook for about 3-4 minutes until the edges lift and the bottom is golden.
- Flip the pancake and immediately sprinkle half of the grated cheese on top, followed by half of the sliced tomatoes and a sprinkle of black pepper.
- Cover the skillet and cook for another 3-4 minutes until the cheese melts.
- Carefully remove from the skillet, garnish with fresh basil, and repeat the process with the remaining batter and toppings for the second pizza.
