Ingredients

  • Almond flour - 150g
  • Shredded mozzarella cheese - 100g
  • Cream cheese - 50g
  • Eggs - 2 large
  • Baking powder - 1 tsp
  • Italian seasoning - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Spinach - 50g (fresh or frozen)
  • Salami - 50g (thinly sliced)
  • Parmesan cheese - 30g (grated)
  • Olive oil - 1 tbsp

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, eggs, baking powder, Italian seasoning, salt, and black pepper. Mix until a dough forms.
  3. Press the dough into a greased 20cm (8-inch) pie dish evenly across the bottom and up the sides to form a crust.
  4. In a skillet, heat olive oil over medium heat and sauté the spinach until wilted. If using frozen spinach, make sure to thaw and drain excess water before adding to the skillet.
  5. Spread the sautéed spinach evenly over the crust, then layer the salami slices on top.
  6. Sprinkle grated Parmesan cheese over the salami and spinach for added flavor.
  7. Bake the pizza in the preheated oven for 20-25 minutes, or until the crust is golden brown and the cheese is bubbling.
  8. Remove from the oven and allow to cool for a few minutes before slicing. Serve warm.
