- Zucchini - 1 medium, sliced
- Eggplant - 1 small, diced
- Red bell pepper - 1, diced
- Yellow bell pepper - 1, diced

- Garlic - 2 cloves, minced
- Tomato sauce - 100 grams
- Fresh basil - 10 grams, chopped
- Thyme - 1 teaspoon, dried
- Oregano - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Mozzarella cheese - 150 grams, shredded
Steps
- Preheat your oven to 220°C (428°F).
- In a large bowl, toss the sliced zucchini, diced eggplant, diced red and yellow bell peppers, and sliced onion with olive oil, minced garlic, thyme, oregano, salt, and black pepper.
- Spread the vegetables on a baking sheet in a single layer and roast in the oven for 20 minutes, stirring halfway through.
- While the vegetables roast, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough to a pizza stone or a baking sheet lined with parchment paper.
- Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
- Once the vegetables are roasted, remove them from the oven and distribute them evenly over the tomato sauce.
- Sprinkle the shredded mozzarella cheese over the vegetables and add fresh basil on top.
- Bake the pizza in the oven for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.
- Remove the pizza from the oven, let it cool for a few minutes, slice, and serve hot.
