Ingredients

  • Pizza dough - 200 grams
  • Olive oil - 2 tablespoons
  • Zucchini - 1 medium, sliced
  • Eggplant - 1 small, diced
  • Red bell pepper - 1, diced
  • Yellow bell pepper - 1, diced
  • Onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Tomato sauce - 100 grams
  • Fresh basil - 10 grams, chopped
  • Thyme - 1 teaspoon, dried
  • Oregano - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mozzarella cheese - 150 grams, shredded

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a large bowl, toss the sliced zucchini, diced eggplant, diced red and yellow bell peppers, and sliced onion with olive oil, minced garlic, thyme, oregano, salt, and black pepper.
  3. Spread the vegetables on a baking sheet in a single layer and roast in the oven for 20 minutes, stirring halfway through.
  4. While the vegetables roast, roll out the pizza dough on a floured surface to your desired thickness.
  5. Transfer the rolled-out dough to a pizza stone or a baking sheet lined with parchment paper.
  6. Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
  7. Once the vegetables are roasted, remove them from the oven and distribute them evenly over the tomato sauce.
  8. Sprinkle the shredded mozzarella cheese over the vegetables and add fresh basil on top.
  9. Bake the pizza in the oven for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.
  10. Remove the pizza from the oven, let it cool for a few minutes, slice, and serve hot.
