Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese (shredded) - 150 grams
  • Parmesan cheese (grated) - 50 grams
  • Egg - 1 large
  • Almond flour - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Tomato sauce (no sugar added) - 100 grams
  • Fresh basil leaves - a handful
  • Cherry tomatoes - 100 grams
  • Oregano - 1 teaspoon

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Remove the leaves from the cauliflower and cut it into florets. Steam the florets for about 8-10 minutes until tender, then drain well and let cool.
  3. Once cooled, blend the cauliflower in a food processor until it resembles rice. Place the riced cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a mixing bowl, combine the riced cauliflower, shredded mozzarella, grated Parmesan, egg, almond flour, salt, and black pepper. Mix until a dough forms.
  5. Line a baking sheet with parchment paper and spread the cauliflower dough into a circular pizza shape about 1/2 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes until golden brown and crispy.
  7. While the crust is baking, prepare the toppings: slice the cherry tomatoes in half and mix them with olive oil, oregano, and a pinch of salt.
  8. Once the crust is ready, remove it from the oven and spread the tomato sauce evenly over the top.
  9. Add the cherry tomatoes and sprinkle additional mozzarella on top.
  10. Return the pizza to the oven and bake for another 10 minutes until the cheese is bubbly and golden.
  11. Remove from the oven, garnish with fresh basil leaves, slice, and serve hot.
