Ingredients
- Cauliflower - 300 grams
- Mozzarella cheese (shredded) - 150 grams
- Parmesan cheese (grated) - 50 grams
- Egg - 1 large
- Almond flour - 30 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Tomato sauce (no sugar added) - 100 grams
- Fresh basil leaves - a handful
- Cherry tomatoes - 100 grams
- Oregano - 1 teaspoon
Steps
- Preheat your oven to 220°C (428°F).
- Remove the leaves from the cauliflower and cut it into florets. Steam the florets for about 8-10 minutes until tender, then drain well and let cool.
- Once cooled, blend the cauliflower in a food processor until it resembles rice. Place the riced cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the riced cauliflower, shredded mozzarella, grated Parmesan, egg, almond flour, salt, and black pepper. Mix until a dough forms.
- Line a baking sheet with parchment paper and spread the cauliflower dough into a circular pizza shape about 1/2 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden brown and crispy.
- While the crust is baking, prepare the toppings: slice the cherry tomatoes in half and mix them with olive oil, oregano, and a pinch of salt.
- Once the crust is ready, remove it from the oven and spread the tomato sauce evenly over the top.
- Add the cherry tomatoes and sprinkle additional mozzarella on top.
- Return the pizza to the oven and bake for another 10 minutes until the cheese is bubbly and golden.
- Remove from the oven, garnish with fresh basil leaves, slice, and serve hot.
