- Cauliflower - 400 grams
- Mozzarella cheese - 200 grams, shredded
- Parmesan cheese - 50 grams, grated
- Egg - 1 large
- Almond flour - 50 grams
- Truffle oil - 1 tablespoon
- Fresh truffle (or truffle paste) - 20 grams, finely shaved
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh basil - a handful, for garnish
Steps
- Preheat your oven to 220°C (428°F).
- Grate the cauliflower using a food processor or box grater until it resembles rice.
- Place the grated cauliflower in a microwave-safe bowl and microwave for 5 minutes to soften.
- Let the cauliflower cool slightly, then transfer it to a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the drained cauliflower, 150 grams of mozzarella, 50 grams of Parmesan, egg, almond flour, garlic powder, salt, and black pepper. Mix until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
- Remove the crust from the oven, drizzle with truffle oil, and sprinkle the remaining mozzarella on top.
- Add the shaved truffle (or truffle paste) evenly across the pizza.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is bubbling and melted.
- Remove from the oven, garnish with fresh basil, slice, and serve immediately.
