Ingredients

  • Cauliflower - 400 grams
  • Mozzarella cheese - 200 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Almond flour - 50 grams
  • Truffle oil - 1 tablespoon
  • Fresh truffle (or truffle paste) - 20 grams, finely shaved
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Grate the cauliflower using a food processor or box grater until it resembles rice.
  3. Place the grated cauliflower in a microwave-safe bowl and microwave for 5 minutes to soften.
  4. Let the cauliflower cool slightly, then transfer it to a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a mixing bowl, combine the drained cauliflower, 150 grams of mozzarella, 50 grams of Parmesan, egg, almond flour, garlic powder, salt, and black pepper. Mix until well combined.
  6. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
  7. Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
  8. Remove the crust from the oven, drizzle with truffle oil, and sprinkle the remaining mozzarella on top.
  9. Add the shaved truffle (or truffle paste) evenly across the pizza.
  10. Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is bubbling and melted.
  11. Remove from the oven, garnish with fresh basil, slice, and serve immediately.
