Ingredients

  • Almond flour - 150g
  • Egg - 1 large
  • Mozzarella cheese - 100g, shredded
  • Parmesan cheese - 30g, grated
  • Zucchini - 100g, diced
  • Eggplant - 100g, diced
  • Bell pepper - 100g, diced
  • Tomato - 100g, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the almond flour, egg, 50g of mozzarella, and Parmesan cheese to form a dough.
  3. Press the dough onto a lined baking sheet to create a pizza base, about 1 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
  5. While the crust is baking, heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  6. Add the diced zucchini, eggplant, and bell pepper to the pan and cook for about 5-7 minutes until softened.
  7. Stir in the diced tomato, oregano, salt, and pepper, and cook for an additional 5 minutes, allowing the flavors to meld.
  8. Remove the pizza crust from the oven and evenly spread the ratatouille mixture over it.
  9. Sprinkle the remaining mozzarella cheese on top and return the pizza to the oven for another 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven, garnish with fresh basil, slice, and serve.
