- Almond flour - 150g
- Egg - 1 large
- Mozzarella cheese - 100g, shredded
- Parmesan cheese - 30g, grated
- Zucchini - 100g, diced
- Eggplant - 100g, diced
- Bell pepper - 100g, diced
- Tomato - 100g, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - a handful, for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine the almond flour, egg, 50g of mozzarella, and Parmesan cheese to form a dough.
- Press the dough onto a lined baking sheet to create a pizza base, about 1 cm thick.
- Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
- While the crust is baking, heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the diced zucchini, eggplant, and bell pepper to the pan and cook for about 5-7 minutes until softened.
- Stir in the diced tomato, oregano, salt, and pepper, and cook for an additional 5 minutes, allowing the flavors to meld.
- Remove the pizza crust from the oven and evenly spread the ratatouille mixture over it.
- Sprinkle the remaining mozzarella cheese on top and return the pizza to the oven for another 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh basil, slice, and serve.
