- Whole wheat pizza dough - 200 grams

- Garlic - 2 cloves, minced
- Mixed mushrooms (shiitake, cremini, button) - 200 grams, sliced
- Spinach - 100 grams, fresh
- Goat cheese - 100 grams, crumbled
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated
Steps
- Preheat your oven to 220°C (428°F).
- On a floured surface, roll out the whole wheat pizza dough to your desired thickness.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- In a skillet, heat the olive oil over medium heat and add the minced garlic, sautéing for about 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they are softened and lightly browned.
- Stir in the fresh spinach, thyme, and rosemary, cooking for an additional 2-3 minutes until the spinach wilts. Season with salt and pepper to taste.
- Spread the mushroom and spinach mixture evenly over the pizza dough.
- Crumble the goat cheese over the top and sprinkle with grated Parmesan cheese.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is bubbly.
- Remove from the oven, allow to cool slightly, then slice and serve.
