- Cauliflower - 300 grams
- Mozzarella cheese - 150 grams, grated
- Parmesan cheese - 50 grams, grated
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Cherry tomatoes - 100 grams, halved
- Fresh basil - a handful, for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Steam the cauliflower until tender, about 10-15 minutes, then drain and let it cool.
- Once cooled, finely chop or rice the cauliflower using a food processor.
- In a mixing bowl, combine the riced cauliflower, grated mozzarella, grated Parmesan, egg, garlic powder, oregano, salt, and black pepper. Mix until well combined.
- Line a baking sheet with parchment paper and spread the cauliflower mixture into a pizza shape, about 1 cm thick.
- Brush the top with olive oil and bake for 20 minutes or until golden brown.
- Remove the crust from the oven and add the halved cherry tomatoes on top.
- Return to the oven and bake for an additional 10 minutes.
- Once done, let it cool for a few minutes, then garnish with fresh basil before slicing and serving.
