Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese - 150 grams, grated
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Steam the cauliflower until tender, about 10-15 minutes, then drain and let it cool.
  3. Once cooled, finely chop or rice the cauliflower using a food processor.
  4. In a mixing bowl, combine the riced cauliflower, grated mozzarella, grated Parmesan, egg, garlic powder, oregano, salt, and black pepper. Mix until well combined.
  5. Line a baking sheet with parchment paper and spread the cauliflower mixture into a pizza shape, about 1 cm thick.
  6. Brush the top with olive oil and bake for 20 minutes or until golden brown.
  7. Remove the crust from the oven and add the halved cherry tomatoes on top.
  8. Return to the oven and bake for an additional 10 minutes.
  9. Once done, let it cool for a few minutes, then garnish with fresh basil before slicing and serving.
