- Chickpea flour - 150 grams
- Water - 200 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 150 grams, halved
- Zucchini - 100 grams, thinly sliced
- Bell pepper - 100 grams, diced
- Red onion - 50 grams, thinly sliced
- Black olives - 50 grams, pitted and sliced
- Fresh basil - a handful, torn
- Dried oregano - 1 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
Steps
- In a mixing bowl, combine the chickpea flour, water, 1 tablespoon of olive oil, salt, and black pepper. Whisk until smooth and let it rest for 15 minutes.
- Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
- Pour the chickpea batter onto the prepared baking sheet and spread it into a round shape, about 1/2 cm thick.
- Bake the crust in the preheated oven for 10-12 minutes, or until it is firm and slightly golden.
- While the crust is baking, prepare the toppings by mixing the cherry tomatoes, zucchini, bell pepper, red onion, black olives, torn basil, and dried oregano in a bowl. Drizzle with the remaining tablespoon of olive oil and mix well.
- Once the crust is ready, remove it from the oven and evenly distribute the vegetable mixture over the top.
- If using, sprinkle the grated Parmesan cheese over the vegetables.
- Return the pizza to the oven and bake for an additional 8-10 minutes, or until the vegetables are tender and slightly caramelized.
- Remove from the oven, allow to cool for a few minutes, slice, and serve hot.
