Ingredients

  • Chickpea flour - 150 grams
  • Water - 200 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 100 grams, thinly sliced
  • Bell pepper - 100 grams, diced
  • Red onion - 50 grams, thinly sliced
  • Black olives - 50 grams, pitted and sliced
  • Fresh basil - a handful, torn
  • Dried oregano - 1 teaspoon
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a mixing bowl, combine the chickpea flour, water, 1 tablespoon of olive oil, salt, and black pepper. Whisk until smooth and let it rest for 15 minutes.
  2. Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
  3. Pour the chickpea batter onto the prepared baking sheet and spread it into a round shape, about 1/2 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until it is firm and slightly golden.
  5. While the crust is baking, prepare the toppings by mixing the cherry tomatoes, zucchini, bell pepper, red onion, black olives, torn basil, and dried oregano in a bowl. Drizzle with the remaining tablespoon of olive oil and mix well.
  6. Once the crust is ready, remove it from the oven and evenly distribute the vegetable mixture over the top.
  7. If using, sprinkle the grated Parmesan cheese over the vegetables.
  8. Return the pizza to the oven and bake for an additional 8-10 minutes, or until the vegetables are tender and slightly caramelized.
  9. Remove from the oven, allow to cool for a few minutes, slice, and serve hot.
