Ingredients

  • Olive oil - 2 tablespoons
  • Warm water - 100ml
  • Active dry yeast - 5g
  • Salt - 1 teaspoon
  • Dried herbs (thyme, oregano) - 1 teaspoon each
  • Red bell pepper - 1, diced
  • Zucchini - 1, sliced
  • Red onion - 1/2, sliced
  • Mushrooms - 100g, sliced
  • Cherry tomatoes - 100g, halved
  • Garlic - 2 cloves, minced
  • Balsamic vinegar - 1 tablespoon
  • Fresh basil - a handful, for garnish

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour, salt, and dried herbs. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth, then cover with a cloth and let it rise in a warm place for 20 minutes.
  4. Preheat the oven to 220°C (428°F).
  5. While the dough is rising, prepare the toppings. In a skillet, heat a tablespoon of olive oil over medium heat. Add the garlic and sauté for 1 minute.
  6. Add the diced red bell pepper, sliced zucchini, red onion, and mushrooms to the skillet. Sauté for about 5-7 minutes until softened. Add the cherry tomatoes and balsamic vinegar, cooking for an additional 2 minutes. Remove from heat.
  7. Once the dough has risen, roll it out on a floured surface to your desired thickness and shape. Transfer it to a baking sheet lined with parchment paper.
  8. Spread the sautéed vegetable mixture evenly over the pizza base.
  9. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  10. Remove from the oven, garnish with fresh basil, slice, and serve warm.
