- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Heavy cream - 2 tablespoons
- Arugula - 30 grams, for serving
Steps
- Preheat your oven to 220°C (428°F).
- In a mixing bowl, combine almond flour, egg, 50 grams of mozzarella cheese, 15 grams of Parmesan cheese, 1 tablespoon of olive oil, salt, and pepper. Mix until a dough forms.
- Transfer the dough onto a baking sheet lined with parchment paper. Using your hands or a rolling pin, shape it into a pizza crust about 1/2 cm thick.
- Bake the crust in the preheated oven for 10 minutes or until golden brown.
- While the crust is baking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sliced mushrooms, and sauté for about 5-7 minutes until the mushrooms are tender and golden.
- Stir in the chopped thyme, rosemary, and heavy cream, cooking for an additional 2 minutes. Remove from heat.
- Once the crust is ready, remove it from the oven and spread the mushroom mixture evenly over the top.
- Sprinkle the remaining mozzarella and Parmesan cheese over the mushrooms.
- Return the pizza to the oven and bake for another 5-7 minutes until the cheese is melted and bubbly.
- Remove from the oven, let it cool for a minute, then top with fresh arugula before slicing and serving.
