Ingredients

  • Almond flour - 150 grams
  • Egg - 1 large
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Olive oil - 2 tablespoons
  • Fresh mushrooms (e.g., cremini or shiitake) - 150 grams, sliced
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Heavy cream - 2 tablespoons
  • Arugula - 30 grams, for serving

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a mixing bowl, combine almond flour, egg, 50 grams of mozzarella cheese, 15 grams of Parmesan cheese, 1 tablespoon of olive oil, salt, and pepper. Mix until a dough forms.
  3. Transfer the dough onto a baking sheet lined with parchment paper. Using your hands or a rolling pin, shape it into a pizza crust about 1/2 cm thick.
  4. Bake the crust in the preheated oven for 10 minutes or until golden brown.
  5. While the crust is baking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sliced mushrooms, and sauté for about 5-7 minutes until the mushrooms are tender and golden.
  6. Stir in the chopped thyme, rosemary, and heavy cream, cooking for an additional 2 minutes. Remove from heat.
  7. Once the crust is ready, remove it from the oven and spread the mushroom mixture evenly over the top.
  8. Sprinkle the remaining mozzarella and Parmesan cheese over the mushrooms.
  9. Return the pizza to the oven and bake for another 5-7 minutes until the cheese is melted and bubbly.
  10. Remove from the oven, let it cool for a minute, then top with fresh arugula before slicing and serving.
