- Almond flour - 100g
- Egg - 1 large
- Mozzarella cheese (shredded) - 100g
- Olive oil - 2 tablespoons
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Goat cheese (crumbled) - 100g
- Fresh spinach - 50g
- Cherry tomatoes - 100g
- Fresh basil leaves - a handful
- Black pepper - to taste
Steps
- Preheat your oven to 220°C (428°F).
- In a mixing bowl, combine the almond flour, baking powder, and salt.
- In another bowl, whisk together the egg and 1 tablespoon of olive oil.
- Add the egg mixture to the almond flour mixture and stir until a dough forms.
- Fold in half of the mozzarella cheese into the dough until evenly distributed.
- On a baking sheet lined with parchment paper, press the dough into a flat, round pizza shape, about 1cm thick.
- Bake the crust in the preheated oven for about 10-12 minutes or until golden brown.
- While the crust is baking, prepare your toppings: slice the cherry tomatoes in half and set aside.
- Remove the crust from the oven and spread the crumbled goat cheese evenly over the top.
- Add the fresh spinach and cherry tomatoes, followed by the remaining mozzarella cheese.
- Drizzle with the remaining tablespoon of olive oil and season with black pepper.
- Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Once done, remove from the oven, sprinkle with fresh basil leaves, and let it cool for a few minutes before slicing.
