Ingredients

  • Almond flour - 100g
  • Egg - 1 large
  • Mozzarella cheese (shredded) - 100g
  • Olive oil - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Goat cheese (crumbled) - 100g
  • Fresh spinach - 50g
  • Cherry tomatoes - 100g
  • Fresh basil leaves - a handful
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a mixing bowl, combine the almond flour, baking powder, and salt.
  3. In another bowl, whisk together the egg and 1 tablespoon of olive oil.
  4. Add the egg mixture to the almond flour mixture and stir until a dough forms.
  5. Fold in half of the mozzarella cheese into the dough until evenly distributed.
  6. On a baking sheet lined with parchment paper, press the dough into a flat, round pizza shape, about 1cm thick.
  7. Bake the crust in the preheated oven for about 10-12 minutes or until golden brown.
  8. While the crust is baking, prepare your toppings: slice the cherry tomatoes in half and set aside.
  9. Remove the crust from the oven and spread the crumbled goat cheese evenly over the top.
  10. Add the fresh spinach and cherry tomatoes, followed by the remaining mozzarella cheese.
  11. Drizzle with the remaining tablespoon of olive oil and season with black pepper.
  12. Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  13. Once done, remove from the oven, sprinkle with fresh basil leaves, and let it cool for a few minutes before slicing.
