- Eggplant - 200 grams

- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Tomato sauce - 100 grams (sugar-free)
- Mozzarella cheese - 150 grams, shredded
- Fresh basil - 5 leaves, torn
- Oregano - 1/2 teaspoon
Steps
- Preheat your oven to 220°C (428°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for 10 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
- On a baking sheet, arrange the eggplant slices in a single layer. Brush both sides with olive oil and sprinkle with black pepper and garlic powder.
- Bake the eggplant in the preheated oven for 15 minutes until slightly golden and tender.
- Remove the eggplant from the oven and spread the tomato sauce evenly over each slice.
- Sprinkle shredded mozzarella cheese on top of the sauce and add torn basil leaves and oregano.
- Return the baking sheet to the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, let cool for a couple of minutes, then slice and serve warm.
