Ingredients

  • Eggplant - 200 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Tomato sauce - 100 grams (sugar-free)
  • Mozzarella cheese - 150 grams, shredded
  • Fresh basil - 5 leaves, torn
  • Oregano - 1/2 teaspoon

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with paper towels.
  4. On a baking sheet, arrange the eggplant slices in a single layer. Brush both sides with olive oil and sprinkle with black pepper and garlic powder.
  5. Bake the eggplant in the preheated oven for 15 minutes until slightly golden and tender.
  6. Remove the eggplant from the oven and spread the tomato sauce evenly over each slice.
  7. Sprinkle shredded mozzarella cheese on top of the sauce and add torn basil leaves and oregano.
  8. Return the baking sheet to the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven, let cool for a couple of minutes, then slice and serve warm.
