- Cauliflower - 300 grams
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 50 grams, grated
- Egg - 1 large
- Almond flour - 30 grams
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Mixed mushrooms (e.g., cremini, shiitake) - 200 grams, sliced
- Fresh parsley - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (425°F).
- Remove the leaves and stem from the cauliflower, then cut it into florets. Steam the florets for about 10 minutes until tender.
- Drain the steamed cauliflower and let it cool slightly, then transfer it to a clean kitchen towel and wring out as much moisture as possible.
- In a large bowl, combine the drained cauliflower, mozzarella cheese, Parmesan cheese, egg, almond flour, salt, and pepper. Mix until well combined.
- Line a baking sheet with parchment paper and spread the cauliflower mixture into a pizza shape about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes until browned and tender. Season with salt and pepper.
- Remove the crust from the oven and top it with the sautéed mushrooms and any remaining mozzarella cheese.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
- Garnish with chopped parsley before slicing and serving.
