Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Almond flour - 30 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Mixed mushrooms (e.g., cremini, shiitake) - 200 grams, sliced
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Remove the leaves and stem from the cauliflower, then cut it into florets. Steam the florets for about 10 minutes until tender.
  3. Drain the steamed cauliflower and let it cool slightly, then transfer it to a clean kitchen towel and wring out as much moisture as possible.
  4. In a large bowl, combine the drained cauliflower, mozzarella cheese, Parmesan cheese, egg, almond flour, salt, and pepper. Mix until well combined.
  5. Line a baking sheet with parchment paper and spread the cauliflower mixture into a pizza shape about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
  7. While the crust is baking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  8. Add the sliced mushrooms to the skillet and cook for 5-7 minutes until browned and tender. Season with salt and pepper.
  9. Remove the crust from the oven and top it with the sautéed mushrooms and any remaining mozzarella cheese.
  10. Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
  11. Garnish with chopped parsley before slicing and serving.
