Ingredients

  • Almond flour - 120 grams
  • Mozzarella cheese (shredded) - 150 grams
  • Cream cheese - 30 grams
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh mozzarella (sliced) - 100 grams
  • Ripe tomatoes (sliced) - 100 grams
  • Fresh basil leaves - 10 grams
  • Balsamic vinegar (optional) - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave for 30 seconds, stir, then heat for another 30 seconds until melted and well combined.
  3. In a mixing bowl, combine almond flour, baking powder, and salt. Add the melted cheese mixture and the egg. Mix until a dough forms.
  4. On a parchment-lined baking sheet, spread the dough out into a pizza shape, about 0.5 cm thick.
  5. Bake the crust in the preheated oven for 10-12 minutes, or until golden and firm.
  6. Remove the crust from the oven and layer the sliced fresh mozzarella and tomatoes on top.
  7. Drizzle with olive oil and season with salt and pepper to taste.
  8. Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is bubbly.
  9. Remove from the oven and garnish with fresh basil leaves. Drizzle with balsamic vinegar if desired.
  10. Slice and serve warm.
