Ingredients
- Almond flour - 120 grams
- Mozzarella cheese (shredded) - 150 grams
- Cream cheese - 30 grams
- Egg - 1 large
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh mozzarella (sliced) - 100 grams
- Ripe tomatoes (sliced) - 100 grams
- Fresh basil leaves - 10 grams
- Balsamic vinegar (optional) - 1 tablespoon
Steps
- Preheat the oven to 220°C (428°F).
- In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave for 30 seconds, stir, then heat for another 30 seconds until melted and well combined.
- In a mixing bowl, combine almond flour, baking powder, and salt. Add the melted cheese mixture and the egg. Mix until a dough forms.
- On a parchment-lined baking sheet, spread the dough out into a pizza shape, about 0.5 cm thick.
- Bake the crust in the preheated oven for 10-12 minutes, or until golden and firm.
- Remove the crust from the oven and layer the sliced fresh mozzarella and tomatoes on top.
- Drizzle with olive oil and season with salt and pepper to taste.
- Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is bubbly.
- Remove from the oven and garnish with fresh basil leaves. Drizzle with balsamic vinegar if desired.
- Slice and serve warm.
