Steps
- Preheat the oven to 220°C (428°F).
- Cut the cauliflower into florets and steam until tender, about 10 minutes. Drain and let cool.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice.
- Place the riced cauliflower in a clean kitchen towel and squeeze out excess moisture.
- In a bowl, mix the cauliflower, egg, mozzarella, Parmesan, garlic powder, oregano, salt, and black pepper until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust for 20 minutes or until golden brown.
- Remove the crust from the oven and drizzle with olive oil.
- Top the pizza with halved cherry tomatoes, crumbled feta, and fresh basil leaves.
- Return the pizza to the oven for an additional 10 minutes until the tomatoes are slightly roasted.
- Let cool for a few minutes, slice, and serve.
