Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Mozzarella cheese, shredded - 100 grams
  • Parmesan cheese, grated - 30 grams
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Cherry tomatoes, halved - 100 grams
  • Fresh basil leaves - 10 grams
  • Feta cheese, crumbled - 50 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Cut the cauliflower into florets and steam until tender, about 10 minutes. Drain and let cool.
  3. Once cooled, pulse the cauliflower in a food processor until it resembles rice.
  4. Place the riced cauliflower in a clean kitchen towel and squeeze out excess moisture.
  5. In a bowl, mix the cauliflower, egg, mozzarella, Parmesan, garlic powder, oregano, salt, and black pepper until well combined.
  6. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick.
  7. Bake the crust for 20 minutes or until golden brown.
  8. Remove the crust from the oven and drizzle with olive oil.
  9. Top the pizza with halved cherry tomatoes, crumbled feta, and fresh basil leaves.
  10. Return the pizza to the oven for an additional 10 minutes until the tomatoes are slightly roasted.
  11. Let cool for a few minutes, slice, and serve.
