- Cauliflower - 300 grams, riced
- Mozzarella cheese - 150 grams, shredded
- Parmesan cheese - 30 grams, grated
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Zucchini - 100 grams, sliced
- Bell pepper (red or yellow) - 100 grams, diced
- Cherry tomatoes - 100 grams, halved
- Olive oil - 1 tablespoon
- Fresh basil - for garnish
Steps
- Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
- In a microwave-safe bowl, steam the riced cauliflower for about 5 minutes until tender. Allow it to cool slightly.
- Once cooled, place the riced cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the drained cauliflower, shredded mozzarella, grated Parmesan, egg, garlic powder, oregano, salt, and black pepper. Mix until well combined.
- Transfer the mixture onto the prepared baking sheet and shape it into a pizza crust, about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden and firm.
- While the crust is baking, toss the sliced zucchini, diced bell pepper, and halved cherry tomatoes in olive oil and seasoning. Set aside.
- Remove the crust from the oven and evenly distribute the vegetable mixture on top.
- Return the pizza to the oven and bake for an additional 10-15 minutes until the vegetables are tender.
- Remove from the oven, garnish with fresh basil, slice, and serve hot.
