Ingredients

  • Cauliflower - 300 grams, riced
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Zucchini - 100 grams, sliced
  • Bell pepper (red or yellow) - 100 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Olive oil - 1 tablespoon
  • Fresh basil - for garnish

Steps

  1. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, steam the riced cauliflower for about 5 minutes until tender. Allow it to cool slightly.
  3. Once cooled, place the riced cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a mixing bowl, combine the drained cauliflower, shredded mozzarella, grated Parmesan, egg, garlic powder, oregano, salt, and black pepper. Mix until well combined.
  5. Transfer the mixture onto the prepared baking sheet and shape it into a pizza crust, about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes until golden and firm.
  7. While the crust is baking, toss the sliced zucchini, diced bell pepper, and halved cherry tomatoes in olive oil and seasoning. Set aside.
  8. Remove the crust from the oven and evenly distribute the vegetable mixture on top.
  9. Return the pizza to the oven and bake for an additional 10-15 minutes until the vegetables are tender.
  10. Remove from the oven, garnish with fresh basil, slice, and serve hot.
