- Egg - 1 large
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Mushrooms, sliced - 200 grams
- Olive oil - 1 tablespoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- Preheat the oven to 220°C (425°F).
- Wash and chop the cauliflower into florets, then steam or microwave until tender, about 5-7 minutes.
- Let the cooked cauliflower cool slightly, then blend it in a food processor until it resembles rice.
- Transfer the cauliflower rice to a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the cauliflower rice, 100 grams of mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture evenly on a baking sheet lined with parchment paper, forming a round pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
- While the crust is baking, heat olive oil in a skillet over medium heat, then add the sliced mushrooms. Sauté until the mushrooms are tender and golden, about 5-7 minutes.
- Once the crust is done, remove it from the oven and top it with the sautéed mushrooms and the remaining 50 grams of mozzarella cheese.
- Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh parsley, slice, and serve hot.
