Ingredients

  • Cauliflower - 250 grams
  • Mozzarella cheese, shredded - 150 grams
  • Parmesan cheese, grated - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mushrooms, sliced - 200 grams
  • Olive oil - 1 tablespoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Wash and chop the cauliflower into florets, then steam or microwave until tender, about 5-7 minutes.
  3. Let the cooked cauliflower cool slightly, then blend it in a food processor until it resembles rice.
  4. Transfer the cauliflower rice to a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a mixing bowl, combine the cauliflower rice, 100 grams of mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, salt, and pepper. Mix until well combined.
  6. Spread the cauliflower mixture evenly on a baking sheet lined with parchment paper, forming a round pizza crust about 1/2 inch thick.
  7. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
  8. While the crust is baking, heat olive oil in a skillet over medium heat, then add the sliced mushrooms. Sauté until the mushrooms are tender and golden, about 5-7 minutes.
  9. Once the crust is done, remove it from the oven and top it with the sautéed mushrooms and the remaining 50 grams of mozzarella cheese.
  10. Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven, garnish with fresh parsley, slice, and serve hot.
