- Tomato sauce - 100 grams
- Fresh basil - 10 grams, torn
- Salt - to taste
- Black pepper - to taste
- Oregano - 1 teaspoon
- Red chili flakes - 1/2 teaspoon (optional)
- Pine nuts - 30 grams, toasted
Steps
- Preheat the oven to 220°C (428°F).
- Slice the eggplant into thin rounds, sprinkle with salt, and let sit for 10 minutes to draw out moisture.
- Rinse the eggplant slices and pat them dry with a paper towel.
- In a bowl, toss the eggplant with olive oil, minced garlic, black pepper, and oregano.
- Spread the eggplant slices on a baking sheet and roast in the oven for 20 minutes, flipping halfway through.
- While the eggplant is roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled dough to a baking tray lined with parchment paper.
- Spread the tomato sauce evenly over the pizza dough.
- Once the eggplant is done roasting, arrange the slices on top of the sauce.
- Sprinkle with torn fresh basil, red chili flakes (if using), and toasted pine nuts.
- Bake the pizza in the oven for an additional 15 minutes or until the crust is golden brown.
- Remove from the oven, let cool for a few minutes, slice, and serve.
