Ingredients

  • Pizza dough - 200g
  • Canned artichoke hearts - 150g, drained and quartered
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Nutritional yeast - 3 tablespoons
  • Cashews - 50g, soaked for 2 hours and drained
  • Lemon juice - 1 tablespoon
  • Fresh basil - 10g, chopped
  • Fresh thyme - 5g, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - to taste
  • Cherry tomatoes - 100g, halved
  • Arugula - 30g, for garnish

Steps

  1. Preheat your oven to 220°C (428°F) and prepare a baking sheet with parchment paper.
  2. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to the prepared baking sheet.
  3. In a small bowl, mix the olive oil, minced garlic, salt, and black pepper, then brush this mixture over the pizza crust.
  4. In a blender, combine the soaked cashews, nutritional yeast, lemon juice, a pinch of salt, and a little water. Blend until smooth and creamy, adding more water if necessary to achieve a spreadable consistency.
  5. Spread the cashew mixture evenly over the pizza dough.
  6. Distribute the quartered artichoke hearts and halved cherry tomatoes over the cashew spread.
  7. Sprinkle the chopped basil and thyme over the top, then place the pizza in the preheated oven.
  8. Bake for 15-20 minutes, or until the crust is golden and crispy.
  9. Remove from the oven and let it cool for a few minutes before garnishing with fresh arugula.
  10. Slice and serve warm.
