- Canned artichoke hearts - 150g, drained and quartered

- Garlic - 2 cloves, minced
- Nutritional yeast - 3 tablespoons
- Cashews - 50g, soaked for 2 hours and drained
- Lemon juice - 1 tablespoon
- Fresh basil - 10g, chopped
- Fresh thyme - 5g, chopped
- Salt - 1/2 teaspoon
- Black pepper - to taste
- Cherry tomatoes - 100g, halved
- Arugula - 30g, for garnish
Steps
- Preheat your oven to 220°C (428°F) and prepare a baking sheet with parchment paper.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to the prepared baking sheet.
- In a small bowl, mix the olive oil, minced garlic, salt, and black pepper, then brush this mixture over the pizza crust.
- In a blender, combine the soaked cashews, nutritional yeast, lemon juice, a pinch of salt, and a little water. Blend until smooth and creamy, adding more water if necessary to achieve a spreadable consistency.
- Spread the cashew mixture evenly over the pizza dough.
- Distribute the quartered artichoke hearts and halved cherry tomatoes over the cashew spread.
- Sprinkle the chopped basil and thyme over the top, then place the pizza in the preheated oven.
- Bake for 15-20 minutes, or until the crust is golden and crispy.
- Remove from the oven and let it cool for a few minutes before garnishing with fresh arugula.
- Slice and serve warm.
