- Cauliflower - 300 grams
- Mozzarella cheese (shredded) - 150 grams
- Parmesan cheese (grated) - 30 grams
- Egg - 1 large
- Almond flour - 30 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Artichoke hearts (canned, drained) - 150 grams
- Cherry tomatoes - 100 grams
- Fresh basil leaves - a handful
- Balsamic glaze - for drizzling
Steps
- Preheat your oven to 220°C (428°F).
- Cut the cauliflower into florets and steam until tender, about 10 minutes.
- Once the cauliflower is cool enough to handle, drain it and then pulse in a food processor until it resembles rice.
- Transfer the riced cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
- In a bowl, combine the drained cauliflower, mozzarella cheese, Parmesan cheese, egg, almond flour, salt, and black pepper. Mix until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
- While the crust is baking, prepare the toppings: slice the artichoke hearts and cherry tomatoes.
- Remove the crust from the oven and brush it with olive oil. Evenly distribute the artichokes and cherry tomatoes on top.
- Return the pizza to the oven and bake for an additional 10 minutes.
- Once done, remove from the oven, garnish with fresh basil leaves and drizzle with balsamic glaze before serving.
