  • Cauliflower - 300 grams
  • Mozzarella cheese (shredded) - 150 grams
  • Parmesan cheese (grated) - 30 grams
  • Egg - 1 large
  • Almond flour - 30 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Artichoke hearts (canned, drained) - 150 grams
  • Cherry tomatoes - 100 grams
  • Fresh basil leaves - a handful
  • Balsamic glaze - for drizzling

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Cut the cauliflower into florets and steam until tender, about 10 minutes.
  3. Once the cauliflower is cool enough to handle, drain it and then pulse in a food processor until it resembles rice.
  4. Transfer the riced cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a bowl, combine the drained cauliflower, mozzarella cheese, Parmesan cheese, egg, almond flour, salt, and black pepper. Mix until well combined.
  6. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
  7. Bake the crust in the preheated oven for 15-20 minutes or until golden brown.
  8. While the crust is baking, prepare the toppings: slice the artichoke hearts and cherry tomatoes.
  9. Remove the crust from the oven and brush it with olive oil. Evenly distribute the artichokes and cherry tomatoes on top.
  10. Return the pizza to the oven and bake for an additional 10 minutes.
  11. Once done, remove from the oven, garnish with fresh basil leaves and drizzle with balsamic glaze before serving.
