Ingredients

  • Pizza dough - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1 medium, thinly sliced
  • Bell pepper - 1 medium, sliced
  • Mushrooms - 150 grams, sliced
  • Zucchini - 1 small, sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Fresh basil - for garnish

Steps

  1. Preheat your oven to 220°C (428°F).
  2. On a floured surface, roll out the pizza dough to your desired thickness, then transfer it to a baking sheet lined with parchment paper.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add the sliced red onion to the skillet and cook for 2-3 minutes until soft.
  5. Stir in the bell pepper, mushrooms, and zucchini, cooking for another 5 minutes until the vegetables are tender.
  6. Add the cherry tomatoes, fresh thyme, salt, and black pepper, mixing well. Cook for an additional 2 minutes.
  7. Spread the vegetable mixture evenly over the rolled out pizza dough.
  8. Sprinkle nutritional yeast over the top of the pizza for a cheesy flavor.
  9. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  10. Remove from the oven, let cool for a minute, then garnish with fresh basil before slicing.
