- Cauliflower - 400 grams
- Mozzarella cheese, shredded - 150 grams
- Parmesan cheese, grated - 50 grams
- Egg - 1 large
- Cream cheese - 100 grams
- Fresh dill, chopped - 2 tablespoons
- Smoked salmon - 100 grams
- Capers - 1 tablespoon
- Olive oil - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Remove the leaves from the cauliflower and cut it into florets. Steam or microwave the florets until tender, about 5-7 minutes.
- Once cooked, drain the cauliflower and let it cool slightly, then pulse in a food processor until it resembles rice.
- Transfer the cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
- In a bowl, combine the cauliflower, 100 grams of mozzarella cheese, parmesan cheese, and the egg. Season with salt and black pepper. Mix until well combined.
- Line a baking sheet with parchment paper and spread the cauliflower mixture into a pizza shape, about 1 cm thick.
- Bake the crust in the preheated oven for 20 minutes, or until golden and firm.
- While the crust is baking, prepare the topping: In a bowl, mix the cream cheese, dill, lemon juice, salt, and black pepper until smooth.
- Once the crust is done, remove it from the oven and spread the cream cheese mixture evenly on top.
- Arrange the smoked salmon over the cream cheese, sprinkle with capers, and then top with the remaining mozzarella cheese.
- Return the pizza to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Remove from the oven, let it cool slightly, slice, and serve.
