Ingredients

  • Cauliflower - 400 grams
  • Mozzarella cheese, shredded - 150 grams
  • Parmesan cheese, grated - 50 grams
  • Egg - 1 large
  • Cream cheese - 100 grams
  • Fresh dill, chopped - 2 tablespoons
  • Smoked salmon - 100 grams
  • Capers - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Remove the leaves from the cauliflower and cut it into florets. Steam or microwave the florets until tender, about 5-7 minutes.
  3. Once cooked, drain the cauliflower and let it cool slightly, then pulse in a food processor until it resembles rice.
  4. Transfer the cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a bowl, combine the cauliflower, 100 grams of mozzarella cheese, parmesan cheese, and the egg. Season with salt and black pepper. Mix until well combined.
  6. Line a baking sheet with parchment paper and spread the cauliflower mixture into a pizza shape, about 1 cm thick.
  7. Bake the crust in the preheated oven for 20 minutes, or until golden and firm.
  8. While the crust is baking, prepare the topping: In a bowl, mix the cream cheese, dill, lemon juice, salt, and black pepper until smooth.
  9. Once the crust is done, remove it from the oven and spread the cream cheese mixture evenly on top.
  10. Arrange the smoked salmon over the cream cheese, sprinkle with capers, and then top with the remaining mozzarella cheese.
  11. Return the pizza to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  12. Remove from the oven, let it cool slightly, slice, and serve.
