Ingredients

  • Almond flour - 150 grams
  • Egg - 1 large
  • Mozzarella cheese, shredded - 100 grams
  • Basil pesto - 50 grams
  • Cherry tomatoes, halved - 100 grams
  • Fresh basil leaves - a handful
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix almond flour, egg, mozzarella cheese, salt, and black pepper until well combined to form the dough.
  3. Line a baking sheet with parchment paper and spread the dough into a round pizza shape, about 1 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
  5. Remove the crust from the oven and spread the basil pesto evenly over the surface.
  6. Top with halved cherry tomatoes and sprinkle additional mozzarella cheese on top.
  7. Return the pizza to the oven and bake for another 10 minutes, or until the cheese is bubbly and slightly browned.
  8. Once done, remove from the oven and garnish with fresh basil leaves and a drizzle of olive oil before slicing.
