Ingredients

  • Polenta - 200 grams
  • Water - 500 milliliters
  • Olive oil - 2 tablespoons
  • Goat cheese - 150 grams, crumbled
  • Cherry tomatoes - 100 grams, halved
  • Zucchini - 1 small, thinly sliced
  • Red onion - 1 small, thinly sliced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh basil - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - to taste

Steps

  1. In a saucepan, bring 500 milliliters of water to a boil. Add 1 teaspoon of salt.
  2. Gradually whisk in 200 grams of polenta, stirring continuously to prevent lumps.
  3. Reduce heat and cook for about 10-15 minutes until the mixture thickens. Stir in 1 tablespoon of olive oil.
  4. Spread the cooked polenta evenly onto a baking sheet lined with parchment paper, forming a round pizza shape about 1 cm thick. Let it cool and set for 10 minutes.
  5. Preheat the oven to 220°C (428°F).
  6. Drizzle the polenta base with 1 tablespoon of olive oil and bake for 15 minutes until slightly golden.
  7. Remove from the oven and top with crumbled goat cheese, cherry tomatoes, zucchini slices, and red onion.
  8. Sprinkle with fresh thyme and black pepper to taste.
  9. Return to the oven and bake for an additional 10-12 minutes until the vegetables are tender and the cheese is slightly melted.
  10. Remove from the oven, garnish with fresh basil, slice, and serve warm.
