- Polenta - 200 grams
- Water - 500 milliliters
- Olive oil - 2 tablespoons
- Goat cheese - 150 grams, crumbled
- Cherry tomatoes - 100 grams, halved
- Zucchini - 1 small, thinly sliced
- Red onion - 1 small, thinly sliced
- Fresh thyme - 1 teaspoon, chopped
- Fresh basil - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - to taste
Steps
- In a saucepan, bring 500 milliliters of water to a boil. Add 1 teaspoon of salt.
- Gradually whisk in 200 grams of polenta, stirring continuously to prevent lumps.
- Reduce heat and cook for about 10-15 minutes until the mixture thickens. Stir in 1 tablespoon of olive oil.
- Spread the cooked polenta evenly onto a baking sheet lined with parchment paper, forming a round pizza shape about 1 cm thick. Let it cool and set for 10 minutes.
- Preheat the oven to 220°C (428°F).
- Drizzle the polenta base with 1 tablespoon of olive oil and bake for 15 minutes until slightly golden.
- Remove from the oven and top with crumbled goat cheese, cherry tomatoes, zucchini slices, and red onion.
- Sprinkle with fresh thyme and black pepper to taste.
- Return to the oven and bake for an additional 10-12 minutes until the vegetables are tender and the cheese is slightly melted.
- Remove from the oven, garnish with fresh basil, slice, and serve warm.
