  • Almond flour - 100 grams
  • Egg - 1 large
  • Mozzarella cheese (shredded) - 100 grams
  • Crème fraîche - 100 grams
  • Onion (thinly sliced) - 1 medium
  • Bacon (diced) - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh chives (chopped) - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine almond flour, egg, and half of the mozzarella cheese to form a dough.
  3. Spread the dough onto a parchment-lined baking sheet, shaping it into a round pizza crust.
  4. Bake the crust in the preheated oven for 10 minutes until slightly golden.
  5. While the crust is baking, heat olive oil in a skillet over medium heat and sauté the diced bacon until crispy.
  6. Add the thinly sliced onion to the skillet and cook until softened and translucent, about 5 minutes.
  7. Remove the crust from the oven and spread the crème fraîche evenly over the top.
  8. Sprinkle the sautéed bacon and onions over the crème fraîche, then top with the remaining mozzarella cheese.
  9. Return the pizza to the oven and bake for an additional 10-12 minutes until the cheese is melted and bubbly.
  10. Garnish with chopped chives before slicing and serving.
