Ingredients

  • Cauliflower - 300 grams
  • Mozzarella cheese, shredded - 150 grams
  • Parmesan cheese, grated - 50 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Canned tomatoes, crushed - 200 grams
  • Black olives, pitted and sliced - 50 grams
  • Capers - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Rinse and chop the cauliflower into florets, then steam until tender, about 5-7 minutes. Allow to cool slightly.
  3. Once cooled, place the cauliflower in a clean kitchen towel and squeeze out excess moisture. Transfer to a mixing bowl.
  4. Add the shredded mozzarella, grated Parmesan, egg, salt, and pepper to the cauliflower. Mix until well combined.
  5. Line a baking sheet with parchment paper and spread the cauliflower mixture into a round pizza shape, about 1/2 inch thick. Bake for 15-20 minutes until golden brown and firm.
  6. While the crust is baking, heat olive oil in a saucepan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  7. Add crushed tomatoes, dried oregano, salt, and pepper. Simmer for 10 minutes to thicken the sauce.
  8. Remove the crust from the oven, spread the tomato sauce evenly on top, and sprinkle with sliced olives and capers.
  9. Return the pizza to the oven and bake for an additional 10 minutes until the toppings are heated through.
  10. Remove from the oven, garnish with fresh basil leaves, slice, and serve hot.
