Ingredients
- Cauliflower - 300 grams
- Mozzarella cheese, shredded - 150 grams
- Parmesan cheese, grated - 50 grams
- Egg - 1 large
- Olive oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Canned tomatoes, crushed - 200 grams
- Black olives, pitted and sliced - 50 grams
- Capers - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - for garnish
Steps
- Preheat your oven to 220°C (425°F).
- Rinse and chop the cauliflower into florets, then steam until tender, about 5-7 minutes. Allow to cool slightly.
- Once cooled, place the cauliflower in a clean kitchen towel and squeeze out excess moisture. Transfer to a mixing bowl.
- Add the shredded mozzarella, grated Parmesan, egg, salt, and pepper to the cauliflower. Mix until well combined.
- Line a baking sheet with parchment paper and spread the cauliflower mixture into a round pizza shape, about 1/2 inch thick. Bake for 15-20 minutes until golden brown and firm.
- While the crust is baking, heat olive oil in a saucepan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add crushed tomatoes, dried oregano, salt, and pepper. Simmer for 10 minutes to thicken the sauce.
- Remove the crust from the oven, spread the tomato sauce evenly on top, and sprinkle with sliced olives and capers.
- Return the pizza to the oven and bake for an additional 10 minutes until the toppings are heated through.
- Remove from the oven, garnish with fresh basil leaves, slice, and serve hot.
